Chicken Satay Skewers – Deliciously juicy and tender chicken pieces marinaded in a satay sauce, and baked in the oven on skewer sticks. Serve with extra satay sauce for dipping for a lunch/dinner everyone will enjoy!

Chicken Satay Skewers
Satay is an Asian dish of seasoned, skewered and grilled meat, and is usually served with a sauce. You can also bake the skewers, and that is what I have done here.
These skewers consist of chunks of juicy chicken that have been marinaded in a peanut sauce for at least 2 hours to really soak up the flavours, and then baked in the oven.
Of course, you can cook these on the grill, but whichever way you cook them, this recipe is sure to be one you’ll make over and over again for lunch or dinner!

Ingredients you’ll need
- Chicken breasts: Boneless and skinless.
- Smooth peanut butter
- Coconut milk
- Soy sauce
- Honey: 1 – 2 tablespoons depending on how sweet you want the sauce.
- Lime juice: Freshly squeezed.
- Garlic cloves
- Ground ginger
- Mild chilli powder
How to make Chicken Satay Skewers
To make these skewers, start by cutting the chicken into bite-sized chunks. Try to make them the same size so they cook evenly together. Set aside.
In a large mixing bowl, whisk together the peanut butter, milk, soy sauce, honey, lime juice, garlic, and spices.

Set aside half of the sauce to be used as a dip for later.

Add the chicken pieces to the remaining sauce, and coat evenly. Cover and refrigerate for at least 2 hours, or overnight.


When ready to cook, remove the chicken from the marinade sauce and thread them onto skewer sticks.
Place the chicken skewers onto a baking tray lined with parchment paper, and cook for 15 – 20 minutes or until golden brown and cooked through.

Serve immediately, using the reserved satay sauce as a dip.

To Grill
Preheat the grill to medium high heat. Cook the skewers, turning occasionally, until the chicken is completely cooked through – about 15 minutes.
Serve immediately.

Can I make chicken skewers ahead of time? Yes! You can marinate the chicken, place on skewers, then refrigerate for up to 1 day.
The sauce can also be made ahead, covered and refrigerated for up to 2-3 days. NOTE: The oil will separate from the peanut butter and coconut milk. Just give it a good mix before using/serving.
How many skewers does this recipe make? This recipe will make 7 – 8 skewers, with 5 pieces of chicken per skewer. Of course, this will change depending on how much chicken you put on each skewer, and how small/big the chicken pieces are.

Ingredients
- 500g (1lb) chicken breasts, boneless and skinless
- 1 cup (250g) smooth peanut butter
- 1 cup (240ml) coconut milk
- 2 tablespoons soy sauce
- 1 - 2 tablespoons honey
- 2 tablespoons lime juice, freshly squeezed
- 2 garlic cloves, minced
- 2 teaspoons ground ginger
- 1 teaspoon mild chilli powder
Instructions
- Cut the chicken breasts into bite-sized chunks, and set aside.
- In a large mixing bowl, whisk together the peanut butter, milk, soy sauce, honey, lime juice, garlic, and spices.
- Set aside half of the sauce to be used as a dip for later.
- Add the chicken pieces to the remaining sauce, and coat evenly. Cover and refrigerate for at least 2 hours, or overnight.
- Preheat the oven to 200C/400F/Gas 6 and line a baking tray with parchment paper.
- Remove the chicken from the marinade sauce and thread them onto skewer sticks.
- Place the chicken skewers onto the prepared baking tray, and cook for 15 - 20 minutes or until golden brown and cooked through.
- Serve warm, using the rest of the satay sauce as a dip!
