Fettuccine Alfredo is an Italian pasta dish consisting of fettuccine pasta tossed in a rich and creamy cheese sauce.
The sauce is traditionally made with butter and Parmesan cheese. It can be made even creamier with the addition of heavy cream, which we have done for this recipe.

Ingredients you’ll need
Here’s a list of ingredients you’ll need to make this recipe. You can find the recipe card at the bottom of this post for the complete list with their measurements.
- Dry fettuccine pasta
- Unsalted butter
- Garlic clove: Minced.
- Double/heavy cream
- Parmigiano Reggiano or Parmesan: Freshly grated. Store-bought grated cheese can be too grainy, which may result in grainy sauce.
- Ground nutmeg: Optional.
- Salt and black pepper: To taste. I add about 1/2 teaspoon of each.
How to make Fettuccine Alfredo
To make this dish, simply cook the pasta as instructed on the packet, adding a tablespoon of salt to the pot of water. Drain, reserving 1/4 cup (60ml) of the water, and set aside.
While the pasta cooks, melt the butter in a large skillet over medium heat.

Add the garlic and stir until fragrant – about 1 minute.

Add the cream and bring to the boil. Turn the heat down to low and simmer for 3 minutes until thickened slightly.
Remove from the heat.

Gradually add the Parmesan, whisking until completely melted and combined. Add the nutmeg and season with salt and pepper.
At this point, the sauce will be a little on the thick side. Add the reserved pasta water and whisk until combined.

Add the drained pasta and toss to coat.

Garnish with parsley and extra Parmesan if desired, and serve immediately.

- 1/2 cup (115g) unsalted butter
- 1 garlic clove, minced
- 1 and 1/4 cups (300ml) heavy cream
- 1 cup (100g) Parmigiano Reggiano or Parmesan, grated
- 1/4 teaspoon ground nutmeg, optional
- Salt and black pepper, to taste
