Honey-Mint Lamb & Potatoes
If you’re looking for a very simple, yet absolutely delicious dinner recipe, look no further.
Tender and juicy lamb steaks that have been marinated in a sweet honey-mint sauce, cooked in the same sauce, and then paired with crispy, soft minted potatoes. SO GOOD.
This recipe serves two, so it makes for a perfect date night meal. Or you can easily double the recipe to serve a family of 4.

Ingredients you’ll need
Here’s a list of ingredients you’ll need to make this recipe. You can find the recipe card at the bottom of this post for the complete list with their measurements.
For the lamb
- Honey
- Olive oil
- Garlic cloves: You’ll want 2 cloves.
- Dried mint
- Salt and pepper
- Lamb steaks
For the potatoes
- New potatoes: Halved or quartered.
- Olive oil
- Dried mint
- Salt and pepper
How to make Honey-Mint Lamb & Potatoes
To make this recipe, lets start by marinating the lamb. In a small bowl, whisk together the honey, oil, garlic, mint, salt and pepper.

Place the lamb steaks into a baking dish, and pour the honey-mint mixture on top, spreading it evenly over both steaks.

Cover with clingfilm and refrigerate for 30 minutes, turning the lamb over halfway through, spreading the marinade over the tops once again.

Prep the new potatoes as instructed below.
Uncover the baking dish and bake for 30 minutes, or until the lamb is cooked through.

TIP: Just before the lamb is cooked, spread the marinade from the dish over the tops one last time, then finish cooking.
Add the potatoes to a large bowl. Add the oil, mint, salt and pepper, and toss until well coated.

Spread the potatoes out onto a roasting pan and bake for 30 minutes, or until cooked through, browned, and tender.

Serve immediately with the lamb, and drizzle extra honey-mint marinade on top.

- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1 teaspoon dried mint
- Salt and pepper, to taste

- 1 lb (450g) new potatoes, halved or quartered
- 2 tablespoons olive oil
- 1 teaspoon dried mint
- Salt and pepper, to taste
Instructions
For the Lamb
- In a small bowl, whisk together the honey, oil, garlic, mint, salt and pepper.
- Place the lamb steaks into a baking dish, and pour the honey-mint mixture on top, spreading it evenly over both steaks.

- Preheat the oven to 200C/400F/Gas 6.
