Chicken Pasta Bake

Pasta and spiced chicken baked in a creamy herbed tomato sauce with a generous cheese topping. A comforting meal that is a family favourite!

In a large saucepan, heat 2 tablespoons of oil over medium heat. Add the onion and cook for 5 - 10 minutes until just starting to brown.

Add the garlic and cook for a further 1 minute. Add the chopped tomatoes, sugar, herbs, salt, and pepper, and stir to combine. Simmer for 10 - 20 minutes, stirring occasionally, until thickened.

Stir in the cream, then remove from the heat and set aside.

Add 2 tablespoons of oil to a frying pan. Add the chicken, paprika, and cumin, and stir until completely coated.

Cook over medium heat until the chicken is cooked through. Remove from the heat and set aside.

Add the cooked pasta to a large ovenproof dish, and stir in the chicken.

Pour the sauce over the pasta.

Top with the cheddar, mozzarella, and parsley. Bake for 20 - 30 minutes or until golden brown and bubbling.
