Chorizo & Egg Breakfast Burritos

Tortilla wraps filled with soft and creamy scrambled eggs, tender potatoes, and diced chorizo. The ULTIMATE breakfast burritos that are packed full of flavour!

In a large frying pan or skillet over medium-high heat, add a little vegetable oil and cook the diced chorizo. Set aside.

In the same skillet, melt 1 tablespoon of butter, then add the whisked eggs. Sprinkle the grated cheese on top. Cook until  softly set and creamy. Set aside.

Melt another tablespoon of butter in the same skillet. Add the diced potatoes, and sprinkle with salt and pepper, to taste. Cook until tender and crispy. Set aside.

Spoon a layer of potatoes onto the tortilla wraps.

Add a layer of scrambled egg, then top with chorizo. Fold in the sides of the tortilla over the filling and roll, tucking in the edges as you go.
